One more pomelo cocktail for the week! This is a spin on the classic Acapulco, a tropical drink with a full bodied pineapple fruit taste. This was an easy substitution with grapefruit juice. No crazy diversions from the original recipe (for now), but great option for that last bit of pomelo juice that you squeezed out!
Ingredients:
- 2 oz Altos plata tequila
- 2 oz Raleigh Rum Company white rum
- 3 oz pineapple juice
- 2 oz pomelo juice
- 1/2 oz lime juice
- 1/2 oz simple syrup
Shake all ingredients over ice and enjoy! This makes enough for two small glasses or a large hurricane glass.
