Since Pomelo juice is a great one-for-one substitute for grapefruit juice I mixed it into one of the simplest grapefruit cocktails out there: the Hemingway Special. Obviously a famous twist off a sugarless Daquiri, and a favorite of its namesake author, it’s an easy drink to make with just a handful of ingredients. If you can’t find pomelos around you, grapefruit juice in the same amount will do just fine… It was good enough for Hemingway after all!
Ingredients:
- 2 oz Raleigh Rum Company white rum
- 1 1/2 oz fresh pomelo juice
- 1/2 oz Luxardo Maraschino
- 1/2 oz Lime juice
Assembly is easy (once you are done juicing the fruit!), just add all ingredients to a shaker, shake up and strain into a glass!
