Cocktail: Pomegranate Sage Cooler

Summer is officially over, so you have to autumnify your Gin and Tonics to make them acceptable to the cocktail snobs.  If you can’t go another fall day without a G&T in hand, I have just the thing for you. This Pomegranate Sage cooler mixes the best of summer’s G&Ts with the colors and tastes of early fall.

Ingredients:

  • 1/2 Pomegranate
  • Sage Simple Syrup (See my How-To Post)
  • 1/2 lime
  • 2 oz Doc Porter’s gin
  • 2 sprigs of rosemary (plus one for garnish)
  • Soda water (or tonic water, if you want it to taste more like a G&T)

-Begin by slicing the pomegranate in half and juicing one of the halves. I found that one half makes enough juice for one drink. Collect the juice and the seeds (called “arils”). You will need roughly 1/2-3/4 oz of pomegranate juice per drink.

-Muddle some rosemary and add the pomegranate juice and 1 oz of Sage simple syrup.

-Squeeze half a lime and add 1/2-3/4 oz lime juice.

-Add 1-2 oz of gin, depending on the strength you prefer.

-Prepare your glass by crushing ice (I prefer ice from a Lewis bag) and adding a layer of pomegranate arils in between ice layers.

-Shake your cocktail and double strain it over the crushed ice.

-Garnish with a sprig of fresh rosemary and serve with a straw!
